Seasonal salad! Blueberries and Beets…

Ingredients:
2 medium-sized fresh beets
1 cup fresh blueberries
2 cups mixed greens (such as spinach, arugula, or kale)
1/4 cup crumbled goat cheese or feta (optional)
1/4 cup chopped walnuts or pecans
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Salt and pepper to taste
Instructions:
Prepare the beets
Wash the beets thoroughly, then trim off the stems and roots. Boil or roast the beets until tender (approximately 30-40 minutes). Allow them to cool, then peel and dice into small cubes.
Make the dressing
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
Assemble the salad
Place the mixed greens in a large bowl. Add the diced beets, fresh blueberries, crumbled goat cheese (if using), and chopped nuts.
Toss and serve
Drizzle the salad with the dressing and gently toss to combine. Serve immediately and enjoy this refreshing, nutrient-packed dish!
